Fresh Green Bean Pasta Salad

Super simple summer salad, and stores great. Another great recipe from Kraft Canada Magazine.

This salad will take about 20min between pasta cooking time and assembly.

What you'll need...

  • 1 cup Penne pasta, uncooked
  • 1.2 lb of green beans, cut in bite size pieces
  • 1 Tomato chopped
  • 1/4 cup Zesty Italian Dressing
  • 1/4 cup of Parmesan cheese
  • 1/2 cup of Kalamata Olives (if desired, the recipe doesn't ask for it, but I added it in because I thought it would taste better and it definitely added that needed salty edge to the salad. You could even eat the salad without dressing if you compensate with olives)

Boil water and cook noodles as directed. 2 minutes before they are to be done toss in the green beans with the noodles. During this time is when I cut the rest of my ingredients.

Once pasta and beans are cooked, strain and run cold water to cool down. Toss in salad bowl with remaining ingredients and Parmesan cheese.

Simple and delicious summer salad. This salad keeps so well. Just pop in a Tupperware and place in the fridge, pack for easy lunches, or a snack.

Enjoy with friends!
