"My Mother-In-Laws Plum Bread"
Actually it's not MY mother-in-laws but someone else's. I found this recipe on allrecipes.com With all the plums we have I was trying to look for recipes that were easy, and didn't requires strange ingredients. Things that were already in my home was what I was going for, especially after being away for the past 2 weekends and now needing to cut down on spending for the next few weeks. I found this recipe, and hey didn't need to spend a penny.
It was pretty simple to make, and it tastes good, and let me tell you it's not like those dry dessert breads, it's moist and soft. The only part that's a little more 'crispy' was the top because of the brown sugar. But it was delicious. So if you've got plums (about 11 roughly) and some time I would definitely recommend trying this bread out.
So here we go...
Ingredients:
1 cup of pitted, chopped plums (you can leave on the skins)
1 tablespoon of all purpose flour
1/2 cup of margarine
1 cup of white sugar
1/2 teaspoon vanilla extract
2 eggs
1 1/2 cups all purpose flour
1/2 teaspoon of salt
1/4 teaspoon of baking soda
1/3 cup plain yogurt (you can use lemon, plain, or orange yogurt. I actually used vanilla, so I'm pretty sure you can use whatever flavor you have)
1/4 cup of brown sugar
Directions:
Most importantly if you can it's important to find a good helper (or helpers) to watch out that things are being measured well, and you're following the directions perfectly. The little helper might also help speed up the process so you don't get too distracted or focused on the recipe but on getting it done. Hey that little helper might want to even try some of the final product. This was my little helper. His most important job was taste testing the plums and finishing off my peaches.
So for real, away we go....
Sprinkle chopped plums with 1 tablespoon of flour in a bowl, and toss to coat. Set aside.
In a large bowl beat the margarine, white sugar, and vanilla extract with an electric mixer until light and fluffy. Beat in the eggs.
In another bowl, sift together 1 1/2 cup of flour with salt and baking soda. (I don't have a sift so I just made sure there were absolutely no clumps and mixed until the dry ingredients were smooth).
Stir the dry ingredients into the egg mixture, alternating with yogurt until the mixture forms a smooth batter.
Lightly stir in flour-coated plums, and pour the batter into the prepared loaf pan.
Sprinkle the top of the batter with brown sugar.
Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45-50 minutes.
Remove from oven, and let cool in the pan 10-15 minutes before removing from pan for slicing.

It smelt so sweet and delicious. This is where I followed my old tradition of trying the batter. YUM! |
