The BEST Fresh Tomato Sauce EVER!

Seriously, this is the best tomato sauce I've ever had. I usually take a tomato base, or sauce and add ingredients to give it a something special, but this time I wanted to make tomato sauce from scratch, no cans, no prepackaged things. I wasn't sure how that would turn out, but I glad to say it was even more delicious than I ever could've imagined, and my husband gave it a 5/5. WOOHOO!!!

The tomatoes I got from my neighbors garden. 
It tasted like something I would expect to be given sitting in a beautiful wine villa in Italy (not that I've ever been there, but the idea of it). It was great. I hope I haven't oversold it, but it's definitely worth the try. For myself I may never go back to store bought pasta sauce. ;)

I actually changed up the recipe a little as I didn't have all the ingredients they asked for, so I will give you both sets of the ingredients and instructions. I also blended small tomatoes I had sitting in my fridge with some from my neighbors garden.


Original Ingredient List:
1/4 cup of olive oil
6 tomatoes chopped (medium to large)
3 onions minced
2 green bell peppers, minced
4 cloves garlic, minced
3 tablespoons of white wine
Salt and pepper to taste

My Ingredient List:
1/4 cup of olive oil
6 tomatoes chopped (medium to large)
4 garlic cloves, minced (or I used pre minced garlic because we had it at home already - I estimated about 4 cloves worth)
3 tablespoons of white wine
Salt and pepper to taste
Basil and Oregano to taste
2 honey & garlic sausages


Instructions:

All my chopped up tomatoes.
In a large saucepan, heat oil on medium heat; add tomatoes, onions, green bell peppers, garlic, white wine, salt & pepper, and oregano & basil.


In a separate pan cook sausages, and cut into pieces. Add to the mix.

Mix ingredients well; cover and simmer for 30 min and serve. I found somewhere between 20-25 was actually sufficient.

Stir into or top your favorite pasta noodles.

  1. lovely! a few things you might want to try (which I had at a friend's house last night and it was AWESOME): add red peppers -- you can puree or put in sliced; throw in capicolo peppers (you know the pickled ones?) for kick; add some good quality green & black olives; throw in some chopped kale; top with lots of parmesan.
