Chicken Salad Bundles
So it's been a while since I've posted about food. Mostly because I was back in Vancouver over December and then have been less than inspired this past January. Now I also haven't been doing a lot of meal planning which helps with my inspiration but have got back into it. Partially out of lack of imagination and also because the last few times I have gone grocery shopping I walk out with food, but once I get home I realize I'm missing lots of things or bought necessities but none that work together, or can't make a good or quick meal (unless I include pasta).
So a couple of days ago I meal planned for the first time in about 2 months. I decided last night would be doing the simplest but really yummy Chicken Salad Bundles. A recipe I took from Life Made Delicious website. The are so easy to make and super quick, and perfect for those days when you have no time, or don't feel like spending a lot of time in the kitchen. Throw together with a salad and you're done. Their also good I think for lunch or dinner, and you can always just dress it up with a variety of sides for a more elaborate dinner menu. These bundles work as a great follow up meal to chicken left overs.
So here they are.

I haven't tried it yet but I'm sure you could adjust or add in other ingredients as you experiment with this recipe. I'd try peppers, ham or turkey, etc..

Chicken Salad Bundles
Ingredients:
- 1 cup (250ml) diced cooked chicken
- 1/2 cup (125ml) grated Swiss or Cheddar cheese (I used mozzarella, really almost any kind of good grating cheese works well)
- 2 green onions, chopped
- 1/4 cup (50ml) mayonnaise (Olive oil mayonnaise is a personal favourite)
- 1 can (235g) Pillsbury Crescents (obviously you could also make your own dough if you prefer, but buying the can is definitely a time saver)
Directions:
- Heat oven to 375 F (190 C)
- Combine chicken, cheese, green onion and mayonnaise
- Unroll dough and separate into 4 rectangles, pinching perforations to seal. Divide chicken mixture into 4 equal parts, placing in centre of rectangles. Pull 4 corners of dough to top centre of filling, twist firmly to seal.
- Place on ungreased baking sheet. Bake for 11-13 minutes. Serve warm.
